While I usually chop on a plastic cutting board with a big chef’s knife, the Cuisinart makes several tasks a lot easier. Chopping cooked or raw meat is one. If you are making hash from leftover corned beef, a short burst in this food processor is the easiest way to go. For mixing certain pastry doughs (pie or pate brisee) this is also a very good item to have, although you have to be careful to go slowly and not overprocess. The one thing the Cuisinart does is heat up the dough if you whirl it around too much, so you have to be careful. And if you put too heavy a bread dough in, using the plastic bread blade, you can heat the shaft up enough to jam the blade onto the central post and that’s a big nuisance. However, with these cautions, the Cuisinart is hands-down my favorite food processor and for shredding, slicing thinly or chopping, pretty much the best kitchen appliance for the job.

This great big cuisanart arrived to replace a little old model I got in the 70s. It seems not only big but a bit complicated to operate…any appliance that needs a DVD to explain itself has a slight problem. However, it works well once you wrangle it into position. I’m beginning to like it a lot!

I love my Cuisinart for making things like hummus or pesto, but not for making breads. Even after following all of the instructions (not adding more than 3 cups of wheat, adding liquids slowing) the machine shuts off every time because the motor is over worked. Also, the dough gets under the blade and it’s a pain to clean. Sometimes I think it would be easier to knead the bread by hand.

I have been using a Hamilton Beach processor for the past few years because it was a gift and I didn’t want to spend the money to buy my own. Am I glad I did! There’s a reason everyone uses the word Cuisinart when referring to a food processor. No one else should even try to produce one. In the case of this food processor, it comes down to that old saying: “you get what you pay for.” You have to spend a little more money but you get a lot more product!

This is a great machine, it is my first food processor and I could not ask for a better performance. I have used it all day today for the first time and was able to slice tomatoes, for a salad, make a wonderful salad dressing, slice eggplant for mousaka, slice potatoes for spanish tortilla and more. If I did not have this little machine I still would be in the kitchen trying to cut all the vegetables with a knife. Thanks to this extremely fast food processor I was able to cut my cooking time in half. No more chopping or slicing vegetables with the knife. If you like to cook, I really recommend getting one.
